THE SNOW IS HERE!
We woke up to at least 6 inches of snow this morning, and I couldn't have been more excited! It was very hard to leave our apartment and go to class because we just wanted to stay inside all day.
Also, I cut off all my hair. 5 inches to be exact :)
I made this last week, and Matt is now obsessed with it. I believe this will be on our weekly menu from now on which is just fine by me! It's SO good!
2 Tablespoons butter
1/2 cup chopped onion (To much of Matt's dismay, I hate onions, so I don't add them)
1 cup finely chopped carrot (I just bought shredded carrots)
1 celery stick, finely chopped (I tripled this)
1 Tablespoon minced garlic
4 cups chicken broth (When I first made this, it was really watery. This time I substituted one cup of broth for a can of Cream of Chicken Soup, and we liked it a lot more)
2 large baking potatoes, peeled and chopped (I used 4 small/medium)
1 Tablespoon flour
1/2 cup water
2/3 cup milk
2 cups chopped broccoli
2 heaping cups shredded cheddar cheese
Melt butter in a large soup pot. Add onions, carrots, and celery and saute over medium heat or until tender. Add garlic and cook an additional 1 to 2 minutes.
Add chicken broth (and Cream of Chicken Soup if you choose to) and potatoes, bring to a boil, and cook until the potatoes are tender. Mix flour with water, add, and simmer until the soup is slightly thickened. Add milk and broccoli and cook until broccoli is tender and soup is heated through. Stir in cheese and allow to melt.
This is seriously one of our favorite recipes so far. It's perfect for fall and winter.
And it makes your husband happy :)
